The Kai Shun Japanese Santoku Knife has a 16cm blade with a 12.2cm handle, and is ideal for quick chopping and slicing of meats, fruits and vegetables.

This knife is composed of 32 layers of damask stainless steel which provides the unique and delightful Damascus effect and has an inner layer of V-gold-10 steel. The steel is made up of 1.0% carbon, 1.5% cobalt and 61 ± 1 HRC, therefore is exceptionally hard and highly resistant against corrosion.

All Kai Shun Japanese Knives have a â??chestnutâ?TM shaped handle which may be ergonomically made to fit comfortably inside your hand. The handles are produced from fine laminated Pakka wood and features a full tang construction.
